Oyster is a generic term used
for a number of different groups of bivalve molluscs which grow for
the most part in marine or brackish water. The true oysters are the
members of the family Ostreidae.
At Venø Fish Farm A/S we work exclusively with the European flat
oyster (Ostrea edulis), also known as the edible oyster. They are
known the Limfjords-oyster in Denmark. In the UK they are commonly
called Natives (this is often preceeded a place-name, such as
Whitstable or Colchester) while in France they are called the Belon.
Up until 1983 there was a significant fishery for oysters in the
Limfjord. Even back then, the Limfjords-oyster was considered to be
the finest tasting species of all.
After the collapse of the oyster stocks in the Limfjord, most of the
oysters which were eaten in Denmark were the Pacific cupped-oyster (Crassostrea
gigas). Flat oysters are fairly round and, as their name implies,
relatively flat. Cupped-oysters on the other hand, are long and quite
deep. The Pacific oysters are produced in large quantities in France,
from where they were imported to Denmark.
Rising demand for Limfjords-oysters and the limited supply has in
recent years resulted in a significantly higher price. Ironically,
most of the Limfjords-oysters are exported to southern European
countries, including France.
We do not compete on price – only on quality. VenOysters are an
exclusive item, intended for the quality-conscious and environmentally
aware consumer who is seeking a pure taste experience, who will also
enjoy the aesthetically pleasing sight of them beautifully presented
on a platter. The consumer whose refuses to compromise on taste or
purity when it comes to food.
