Oysters with dressing
12-16 VenOysters
Dressing
2 dessertspoon lemon juice
1 dessertspoon shallots, finely-chopped
4 dessertspoon good olive oil
1 bottle champagne
Toast
Mix the dressing.
Open
the oysters, keeping the liquor in the shell.
Add a few drops of dressing to each oyster.
Enjoy with cold champagne.
A bite of toast between each oyster helps clear the palette.
Optionally, lightly dust with crushed, crispy bacon but beware of
overkill.
